Creamy Garlic Chicken & Rice

Seasonings

  • Salt, Pepper, Mixed herbs seasoning

Ingredients

  • 1tbsp Olive oil

  • 500g Chicken breast

  • 300g Brown rice

  • 3 Garlic cloves

  • 1 Lemon (for zest) 

  • 750ml Chicken stock

  • 200g Green beans

  • 200g Low-fat Greek yogurt

  • 250g Spinach

  • Handful of fresh parsley

Instructions

  1. Heat the olive oil in a large pan over a medium heat. Add the chicken and fry until it’s fully cooked
  2. Add the brown rice, mixed herbs, garlic and lemon zest. Stir well, and season with salt and black pepper to taste
  3. Pour in the chicken stock, mix thoroughly, and cover the pan with a lid. Leave it to simmer for 15 minutes
  4. Stir in the Greek yoghurt and add the spinach. Cook for a few minutes until the spinach has wilted
  5. Finally, sprinkle with fresh parsley. Serve immediately or portion into containers for meal prep
