Cheesy Beef & Egg Burritos

Ingredients

  • 10 Low-carb flour tortillas burrito sized

  • 2lbs 96/4 Lean ground beef

  • 10 Large eggs

  • 7oz Bag 2% milk/low fat shredded mexican cheese

  • Avocado oil

  • Tabasco or preferred hot sauce (to taste)

  • Salt (to taste)

  • Pepper (to taste)

Instructions

  1. Preheat oven to 395°F
  2. Heat pan to medium high heat, add avocado oil
  3. Add beef, salt, pepper, and Tabasco to taste, cook thoroughly
  4. In a separate pan, heat to medium high heat, add eggs, cook thoroughly
  5. Combine eggs into beef pan 
  6. Lay out 10 low carb flour tortillas 
  7. Portion beef and egg mixture equally onto each tortilla 
  8. Sprinkle equal amount of mexican cheese onto each burrito
  9. Close burritos and line up on baking sheet lined with parchment paper
  10. Bake burritos for 9 minutes
  11. When cooled off, wrap each burrito in tin foil and refrigerate

Storage and Reheating

  • (Recommended) Store 5 in refrigerator and 5 in freezer, when stock in refrigerator gets low, move all from freezer.

  • To reheat (from refrigerated): Cook in the airfryer at 375°F for 7 minutes. Alternatively, microwave and cook on a pan until the outside is golden brown and inside is heated.
