Steak & Potato Plate

Ingredients

  • 1tbsp Olive oil

  • 4tbsp Unsalted butter (divided by tbsp)

  • 1lb Yukon Gold potatoes (diced into ½ inch cubes)

  • 4 Garlic cloves (minced)

  • 1tsp Dried rosemary

  • 1tsp Dried oregano

  • Salt and pepper to taste

  • 2lbs Sirloin steak (cut into 1 inch cubes)

  • Freshly chopped parsley for garnish (optional)

Instructions

  1. Cut and prep potatoes and steak
  2. Put cubed potatoes on a microwave safe plate and cover with cling wrap
  3. Microwave for 3-4 minutes or until soft
  4. Heat pan to medium high heat, add olive oil and 2 tbsp of butter, let butter melt 
  5. Add cubed potatoes, garlic, rosemary, oregano, salt, and pepper to pan, cook until potatoes are golden brown and fork tender. Remove from pan and set aside
  6. Heat pan to high heat, add 2 tbsp of butter and melt. Add steak bites in a single, even layer and cook for 1 minute. Flip or mix steak for additional 1-2 minutes, or until desired doneness. Remove from heat
  7. Add potatoes back into pan and mix together
  8. Top with parsley (optional) 
  9. Divide into 4 equal portions
