Protein Cajun Chicken Pasta Bowls

Ingredients

  • 2lbs Chicken breast

  • 450g Protein pasta

  • 2tbsp Olive oil

  • 1 Red onion (optional)

  • 1 Garlic clove (diced)

  • 200g Shredded mozzarella

  • 200g Cream cheese

  • 1 Jar of red pasta sauce

Instructions

  1. Boil pasta to al dente and save 1/4 cup of the water for later
  2. Dice your chicken breast into 1in. cubes and add to a bowl. In the bowl, drizzle olive oil over chicken and season generously with cajun seasoning. Mix well with hands until each piece of chicken is fully coated
  3. Add chicken to a sprayed medium high heat pan until fully cooked
  4. Transfer cooked chicken to a new bowl/plate and turn the heat down
  5. In the same pan, add your onion and garlic. Stir for 1-2 minutes
  6. Add your pasta sauce, cream cheese, mozzarella cheese and pasta water to the pan. Season with salt, pepper, garlic powder, and onion powder. Stir on low heat until sauce is thick
  7. Add your cooked pasta and chicken to the sauce and mix well until fully incorporated
  8. Portion evenly into 5 meal prep containers and top with red pepper flakes (optional)
