Ingredients

  • 1lb 96/4 Lean ground beef

  • 200g White rice (dry)

  • Cooking spray (avocado recommended)

  • 4 Large eggs

  • 2 Garlic cloves (diced)

  • 1tbsp Grated ginger

  • 60ml Low sodium soy sauce

  • 30g Honey

  • 1tbsp Rice vinegar

  • 1tbsp Gochujang (Korean chili paste)

  • 1tsp Sesame oil

  • Green onion (to taste)

  • Shredded carrots (optional)

  • Cucumber (sliced - optional)

Instructions

  1. Cook rice using preferred method. Store in one meal prep container in the fridge until ready to eat.
  2. In a sprayed pan on medium high heat, add your ground beef. Once beef is mostly cooked, add garlic, rice vinegar, low sodium soy sauce, ginger, honey, gochujang (chili paste), green onion, and seasoning (optional). Mix together until fully combined
  3. Portion beef evenly into 4 separate meal prep containers
  4. When ready to eat, microwave your beef and rice (separately or together) and add to a bowl
  5. In a sprayed pan on medium to medium high heat, fry one egg to preferred doneness
  6. Top your beef and rice bowl with cooked egg, sliced cucumber (optional), and shredded carrots (optional)
