Chickpea Wraps

Ingredients

  • 2 Raw celery stalks (chopped)

  • 1/2 Cup nonfat greek yogurt, plain

  • 2 Cans of chickpeas (drained and rinsed)

  • 2tbsp Nutritional yeast 

  • 2tsp Dried dill weed

  • 8 Pickle slices (chopped)

  • 2tbsp Lemon juice

  • 4tbsp Red onion (chopped)

  • 1cup Romaine lettuce (chopped)

  • 4 Low carb flour tortillas 

Instructions

  1. In a medium bowl, mash the chickpeas with a fork, leaving a few whole beans for texture.
  2. Stir in celery, onion, pickles, yogurt, lemon juice, dill, and nutritional yeast
  3. Season with salt and pepper to taste
  4. Spoon chickpea salad onto the center of a tortilla and top with chopped romaine lettuce
  5. Tightly roll up the wrap and enjoy!
