Chicken Fried Rice Bowls

Seasonings

  • Salt, Pepper, Paprika, Garlic powder, Chili powder

Ingredients

  • 400g White rice

  • 2lbs Chicken breast

  • 3tbsp Olive oil

  • Soy sauce (to taste)

  • 1 Bag of frozen peas

  • 4 Eggs

Instructions

  1. Ensure you’ve cooked your rice the day before for the best results
  2. Dice your chicken into 1in. cubes. Put chicken cubes in a large bowl with 1tbsp of olive oil and season with salt, pepper, paprika, garlic powder, and chili powder. Mix with hands until all chicken cubes are fully coated
  3. In a pan on medium high heat, add 1tbsp of olive oil and cook your chicken
  4. Transfer your cooked chicken to a bowl/plate and set aside
  5. In the same pan (or different pan if preferred), add 1tbsp of olive oil, your day old rice, 4 eggs, and frozen peas. Add soy sauce to taste. When eggs and peas are cooked and rice is hot, add your chicken. Mix together until fully incorporated
  6. Evenly portion into 4 meal prep containers
