BBQ Chicken Sweet Potato Bowl

Seasonings

  • Salt, Pepper, Garlic powder, Onion powder, Paprika, Chili powder (optional)

Ingredients

  • 1.25lbs Chicken breast

  • 400g Sweet potato (diced)

  • Cooking spray (avocado heavily recommended)

  • 1 Bag of frozen broccoli (optional)

  • 8tbsp Sugar free BBQ sauce (Sweet Baby Ray’s recommended)

Instructions

  1. Preheat your oven to 425°F (if using oven)
  2. Cut your sweet potatoes into 1in. cubes and add to a bowl. Season with salt, paprika, and spray lightly with cooking oil (avocado heavily recommended)
  • OVEN

    • Add sweet potato cubes to a sprayed or lined baking sheet and put in the oven for 16-20 minutes, flipping halfway through. Ensure potatoes have reached desired doneness before removing

  • AIR FRYER

    • Add sweet potato cubes to air fryer and cook at 390°F for 18-23 minutes. Ensure potatoes have reached desired doneness before removing

  1. Cut your chicken into 1in. cubes and add to a bowl
  2. Lightly spray your chicken with cooking oil (avocado heavily recommended), season with salt, pepper, garlic powder, onion powder, paprika, and chili powder (optional)
  3. In a sprayed pan on medium high heat, add your diced chicken and cook thoroughly
  4. Evenly portion cooked potatoes into 2 meal prep containers. Top with cooked chicken
  5. When ready for consumption, reheat in the microwave. Remove meal prep from microwave and top with 4tbsp (or less) sugar free BBQ sauce and steamed broccoli (optional)
